History

The history of green tea, which comes from China, dates back to 2737 B.C. The Chinese Emperor Shennong in the Yunan province of China made the unintentional discovery when fresh tea leaves from a nearby Camellia sinensis tea tree dropped into his cup of freshly boiled water.

Green tea is claimed to have become popular in Japan in about the 12th century, and China and Japan are now the biggest exporters of green tea worldwide. It is produced by just drying the mature plant leaves after little processing.

Process

Green tea is made by gathering Camellia sinensis plant leaves, then heating them by pan frying or steaming, and then drying them to prevent excessive oxidation. The green leaves become dark from oxidation, which also changes the flavour. 

For 12 to 24 hours, the air-blown approach is used to wither leaves by removing moisture from them. After which you pan fry or steam it. By doing this the green colour is preserved because the enzyme activity in the leaf that causes oxidation and fermentation are reduced or stopped.   The leaves go through their initial drying process in a rotating drum for a while to further lower their moisture content afterwards and rolling is done to break the leaves up into finer pieces.
